    Most people assume cake is just flour, sugar, eggs, and butter. In many cases it is. But commercial baking introduces ingredients that are not always halal. Gelatine, certain emulsifiers, alcohol-based extracts, and some food colourings can all be problematic.

    If you follow halal dietary guidelines, knowing what goes into your cake matters. Here is a plain breakdown of the ingredients that need attention and why.

    Gelatine

    Gelatine is the most commonly discussed ingredient. It is used in mousses, mirror glazes, and some fillings to create a set texture. Standard gelatine comes from pork — which makes it haram.

    Halal alternatives exist. Beef gelatine from halal-slaughtered animals, agar-agar (plant-based), and pectin all work as substitutes. At LittleCakesNL, our buttercream cakes do not require gelatine at all. Buttercream holds its shape without it.

    Vanilla Extract and Alcohol

    Pure vanilla extract contains alcohol — typically 35% ethanol as a solvent. This is a grey area. Some scholars consider it permissible because the amount used in baking is tiny and the alcohol evaporates during baking. Others avoid it entirely.

    We use vanilla flavouring that does not contain alcohol. It keeps things simple and removes any doubt. The taste difference is negligible in a finished cake, especially when paired with fillings like chocolate ganache or strawberry.

    Emulsifiers and Food Colouring

    Emulsifiers (like E471, mono- and diglycerides) can be derived from animal fats. If the source animal was not halal-slaughtered, the emulsifier is not halal. This is one of those hidden ingredients that most people never think about.

    Some food colourings, particularly carmine (E120), come from insects. Whether this is halal depends on your school of thought, but we avoid it regardless.
